These Oatmeal Waffles are totally gluten-free. They are made with ground up oats and contain no flour. Spices like aromatic cinnamon, cloves and cardamom, add a depth of flavor to these waffles. When paired with some maple syrup and fruit, these Oatmeal Waffles make eating healthier such a treat.
My daughter and I just finished binge-watching Netflix’s psychological thriller, “You” and I’m curious if you happen to be a fan as well?
If not, please don’t run off just yet as I will show you how a forkful of these Oatmeal Waffles tie in with some small part in the show or you can skip to the 7th paragraph.
But, if you are curious about You, then a quick synopsis would be the main character, Joe, seems to develop crushes that turn into dangerous infatuations. In season 1 of the thriller, Joe gave new meaning to Meatloaf’s song “I would do anything for love” …only unlike the song, there was nothing Joe would not do for love – nothing at all.
Season 1 of You was good. But, season 2 was even better.
In season two, the main character Joe must change his name. The name he now goes by is “Will.” And, Will has started a love affair or unhealthy infatuation with a lady, called “Love,” who is one of the owners/ and a pastry chef of a health store named Anavrin in Los Angeles.
In the early days of their courtship, Love (being the foodie she is) feels Joe must get to truly know LA – so, she begins a quest to find out what his “perfect bite” is. In other words, what would tantalize his tastebuds to oblivion… 😉
Aaaaannnnnd, that’s what a forkful of these Oatmeal Waffles with a slice of banana, a raspberry and some maple syrup is to me: the perfect bite!
A few years ago, I decided to quit sugar cold turkey. As in I gave up sugar, coconut sugar, honey, maple syrup, jaggery, oats, bread, … if it was carbs that could turn into sugar or any form of sugar, I gave it up. I didn’t think about being on a Keto diet – but that was pretty much what it was.
For 30 days, I managed to live without any form of sugar.
But I wasn’t quite happy.
I missed so many foods – I had lost the joy of eating and that’s no fun when you run a food blog.
So, after the first 30 days, I added back stevia and other artificial sweeteners and started to enjoy treats like these bites. But I still wasn’t quite happy.
So, after 3 months, I got back on the sugar bandwagon and wowed not to ever, ever, EVER, give up sugar again.
However, the older I get, the more I feel the need to be mindful of what I put into my body.
Having a mom who is feeling the side effects of almost 3o years as a diabetic and knowing several others who are battling diabetes, I know that that is one fight I don’t want to engage in myself.
So, this year I figured I would try to eat less refined sugar. I don’t plan on giving it up entirely – because there will be birthday cakes, and graduation cupcakes, and wedding cake, and, well, you get the gist right?
But, for at least 80 percent of my food intake, I hope to try to take in less refined sugar. Instead of opting out of all sugar, I am just cutting down on my intake of the bleached-white stuff.
So instead of sugary scones and muffins, I hope to opt for waffles like these ones, these Oatmeal Pancakes, eggs and avocado toast. I don’t miss sugar much at lunch. But, after dinner, I have always had a dessert and quitting it cold turkey wouldn’t be the best choice for me. So I hope to share healthier, refined sugar-free treats on here as well. 😊

I’m kicking off this journey with these Oatmeal waffles. These waffles are so easy to make.
What are the ingredients for Oatmeal Waffles?
You just need:
• coconut milk,
• olive oil,
• an egg,
• baking powder,
• cloves, and
Ingredients that you might use to make a protein-heavy bowl of oatmeal.
Only, in this case, these ingredients are used to make these delicious, gluten-free, refined sugar-free, Oatmeal Waffles.
Oh, and I almost forgot – you will also need a good waffle maker.
How do you make gluten-free Oatmeal Waffles?
You will simply mix all your ingredients together and then let them sit for about 5-8 minutes. Then, when the mix has thickened up (it will also look like it has expanded in volume), you will add it to your waffle maker and within minutes, you will have two delicious waffles to enjoy.
How to keep breakfast refined sugar-free?
I chose to enjoy these waffles with maple syrup instead of pancake syrup which is full of refined sugars.
I also opted to serve these oatmeal waffles with raspberries and sliced bananas for a delicious and wholesome breakfast.
You can enjoy these as a leisurely breakfast on a weekend or make them ahead and grab them to go on a hectic weekday. Either way, I sure do hope you enjoy these as much as my daughter and I do.
- 1 cup rolled oats (any that are certified gluten free)
- 1/4 cup coconut milk (I used So Delicious)
- 3 tbsp olive oil
- 1 egg
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp cloves
- 1/4 tsp cardamom
- 1/2 tsp salt
- Add the rolled oats to a blender and blend on high until rolled oats are a flour like consistency.
- Add ground oats to a bowl and add in the coconut milk, the olive oil, the baking powder, cardamom, cloves, cinnamon, and salt. Do not mix just yet.
- Break the egg to another bowl and beat it with a fork and then pour that into the waffle mix.
- Mix all ingredients together until well incorporated. Then set it aside for 5-8 minutes. Mix will thicken and seem to increase in volume.
- While mix is sitting - heat up the waffle maker.
- Add about 1/2 the mix into the waffle maker and set it on high. When done, remove waffle. Repeat with the remaining mix.
- When both waffles are done, enjoy them with maple syrup and sliced bananas and raspberries for a delicious, refined sugar-free and gluten-free breakfast.
